Frassetto Spaghetti

Ingredients:
2 cloves of fresh garlic, chopped fine
1 large onion (e.g. Sweet Vidalia), chopped fine
28 oz tomato sauce
28 oz crushed tomatoes
6 oz tomato paste
2 T basil
2 T oregano
1 T black pepper
2 T brown sugar
2 T olive oil
1 C dark wine (Zinfandel or Burgundy)
1 lb meaty constituent of your choosing (spicy Italian sausage, ground beef, turkey…)
Preparation:
Finely chop onion and garlic. Saute onion in large pot with 2 T olive oil until carmelized. Add garlic but be careful not to burn or brown the garlic. Saute meat separately and cook through. Be sure to drain out the fat. Combine all ingredients, brown sugar last. Simmer sauce for 2 hours, serve the next day for enhanced taste.
